Twin Eagles Partner Chef Jamie Gwen’s Grilled Avocado & Spiced Shrimp Recipe

INGREDIENTS
2 tablespoons good quality olive oil
2 tablespoons freshly chopped cilantro
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 garlic clove, minced
Zest of 1 lime
12 large raw shrimp, peeled and deveined
Salt & freshly ground pepper 2 avocados, halved and pit removed
Olive oil
1 cup small cherry tomatoes
INSTRUCTIONS
In a mixing bowl, combine olive oil, cilantro, cumin, paprika, garlic and lime zest. Add shrimp. Season with salt & pepper and toss to coat. Let stand for 15 minutes. Skewer the shrimp, if desired.
Brush each avocado half with olive oil and season with salt and pepper.
Place cherry tomatoes in a perforated grill pan, drizzle with olive oil and season with salt and pepper.
Fire up your Twin Eagles Grill to high heat. Place the avocado halves cut side down on the grill. Cook for two minutes. Grill the shrimp until just cooked through. Place the tomatoes on the grill for two minutes, tossing often, until just blistered.
To serve, pile the cherry tomatoes in the grilled avocado halves. Top with the grilled shrimp. Drizzle with chili oil and garnish with fresh cilantro.
